Heat a non-stick pan over medium heat.
Add a little oil or butter (about 1 teaspoon). Let it melt and heat up (about 30 seconds).
Add the mushrooms to the pan first — they need a little more time.
Cook for about 2–3 minutes, stirring occasionally, until they start to brown and shrink a bit.
Add the chopped tomato and spinach.
Stir and cook for another 2 minutes.
Spinach should wilt, and tomatoes should soften just a little — not mushy.
π Tip: If things start to stick, add a tiny splash of water or a touch more oil.
