The best way to cook lentils is super simple! Here's the basic method:

  1. Rinse the lentils well under cold water to remove dust or debris.

  2. Optional: Soak them for a few hours if you want them even easier to digest (especially brown or green lentils), but it’s not necessary for most.

  3. Boil: Add lentils to a pot with about 3 parts water or broth to 1 part lentils.

  4. Simmer: Bring to a boil, then immediately reduce to a gentle simmer.

  5. Cook Time:

    • Red lentils: about 15–20 minutes (they get soft and a little mushy, great for soups)

    • Green or brown lentils: about 30–35 minutes (they hold their shape better)

    • French (Puy) lentils: about 25–30 minutes (very firm and peppery)

  6. Season after cooking — adding salt or acidic things like vinegar too early can make them tough.
