Making homemade pasta is way simpler (and more fun) than it sounds! Here's a basic method:

Ingredients:

  • 2 cups all-purpose flour (or "00" flour if you have it)

  • 3 large eggs

  • Pinch of salt

Instructions:

  1. Make a flour well: On a clean surface, pile the flour into a mound and make a deep well in the center.

  2. Add the eggs: Crack the eggs into the well, sprinkle in the salt.

  3. Mix slowly: Using a fork, gently beat the eggs, slowly pulling in flour from the edges.

  4. Knead: Once it’s coming together, use your hands to knead it into a dough. Knead for about 8–10 minutes until smooth and elastic (add a tiny bit of flour if sticky).

  5. Rest: Wrap the dough tightly in plastic wrap and let it rest for 30 minutes at room temp — this relaxes the gluten.

  6. Roll and shape: Roll it out with a pasta machine or a rolling pin until thin, then cut into your favorite shapes (tagliatelle, fettuccine, ravioli... whatever you want!).

  7. Cook: Fresh pasta cooks super fast — 2–4 minutes in boiling salted water.
