Ingredients:

2 ½ cups milk (whole milk is best)

3 tablespoons cornstarch

2 teaspoons vanilla extract

Optional for chocolate: ½ cup chopped chocolate or ⅓ cup cocoa powder
Instructions:

Mix dry ingredients: In a medium saucepan (off heat), whisk together the sugar, cornstarch, and salt. (Add cocoa powder here if making chocolate.)

Add milk: Slowly whisk in the milk to avoid lumps.

Cook over medium heat, whisking constantly, until the mixture thickens and starts to bubble (about 5–8 minutes). It should coat the back of a spoon.

Remove from heat: Stir in the vanilla, butter, and chocolate (if using). Stir until smooth.

Cool: Pour into cups or bowls. To prevent a skin from forming, press plastic wrap directly onto the surface.
