  1. Prep the cauliflower: Cut a head of cauliflower into florets and rinse.

  2. Cook it until very tender:

    • Steam, boil, or microwave the florets until they’re fork-soft (about 8–10 minutes steaming, 5–7 minutes boiling, or ~5 minutes microwaving).

  3. Drain well: Get rid of as much water as possible — soggy cauliflower = runny mash.

  4. Blend it smooth:

    • Use a food processor, blender, or immersion blender for the creamiest texture.

    • Add a pat of butter, a splash of cream or milk, salt, and pepper while blending.

    • Roasted garlic, Parmesan, cream cheese, chives, or even a little nutmeg for extra depth.
